Es temporada de Calçots.

El Calçot es una cebolla blanca (Allium Cepa L.) que se cultiva de una manera muy especial para que sea alargada, y que resulta ser uno de los platos típicos por excelencia de la gastronomía catalana. Es típico de algunas zonas de Tarragona, aunque actualmente se cultiva en prácticamente toda Catalunya.

En la zona de cultivo tradicional, la temporada de calçots va de noviembre a mediados de abril. En otras zonas, con climas algo diferentes, es posible avanzar o retrasar la temporada.

La temporada de calçots llega a su momento álgido a partir de la Festa de la Calçotada, que se celebra en Valls el último domingo de enero.

Según la mayoría de medios, y de forma poco acertada, esta fiesta marca el inicio de la temporada. Para ajustarse a la realidad, debería decirse que esta fiesta marca el momento álgido o el inicio de la "temporada alta" de los calçots.

Se dice que el descubrimiento de los calçots se debe a un agricultor de Valls apodado "Xat de Benaiges" quien, a finales del siglo XIX, quemó unas cebollas viejas en el fuego. En vez de tirarlas las peló y probó, descubriendo que su interior era muy dulce y poco fibroso. No hay ninguna documentación que acredite esta historia. Se ha solicitado información de carácter fiable a la Cámara de Comercio de Valls, y a la IGP "Calçot de Valls", y no hemos obtenido ninguna respuesta concluyente. Sin embargo, y gracias al archivo municipal de Valls, sí que disponemos de documentación que acredita la existencia de los calçots en esta población a principios del siglo XX. No así de la existencia del "Xat de Benaiges", una historia que empezó a circular en los años 40 del siglo pasado.

El secreto de una buena calçotada es la salsa donde se introduce el calçot una vez pelado para posteriormente llevarlo a la boca.

Los ingredientes básicos de esta salsa para 4 personas son :

50 gramos de avellanas tostadas

100 gramos de almendras tostadas

200 cl. de aceite de oliva arbequina

4 o 5 tomates maduros

1 cabeza de ajos

4 Ñoras secas

4 ramas de parajil
